Viking’s Table is hosted by Nicolas, who grew up in Normandy, in the north-west of France. Long before food became something he shared with others, it was simply a part of daily life. Much of what he knows about cooking began with his grandmother in the family farm's kitchen, where meals were prepared using whatever the land and the seasons offered. Those moments, watching, helping, tasting, and learning by doing, quietly shaped the way he approaches food today.

Professionally, Nicolas first built his career in the creative industries, particularly in fashion, where he developed a strong appreciation for aesthetics, craftsmanship, and the way people experience spaces and objects. Later, curious about the broader world of hospitality and how places are conceived and brought to life, he returned to Paris to pursue an MBA in Hospitality Management. Today, he works as a Business Development Director in the hospitality industry, helping to shape projects and partnerships across the sector.

However, cooking has remained a constant thread in the background. Hosting dinners for friends gradually became something more meaningful—a way to reconnect with his roots and to enjoy the simple pleasure of bringing people together around a table.

Viking’s Table grew from this instinct. It is not a restaurant, nor is it meant to be overly formal. It is simply a table that Nicolas sets from time to time, where a small group of guests gathers to share a meal inspired by his Normandy heritage, seasonal ingredients, and the idea that food is at its best when it brings people closer.

In many ways, every dinner is also a quiet tribute to his grandmother—the person who first showed him that cooking is less about technique and more about care, patience, and generosity.
